The word has been out on Restaurante Adolfo for a good, long while. It’s a local fixture in Toledo that now, more often than not, caters to an international tourist crowd. Here the chefs take the traditional local recipes of Castilla-La Mancha and change things around a little bit. The specialty is a vegetable-stuffed rabbit loin. The squid salad is a delicious starter, doused in Salmorejo, a thick, cold baste of fresh vegetables similar to Gazpacho.
